Homemade Tomato Sauce



2 onions, peeled and sliced

2 cloves garlic, peeled and sliced

500g good quality tomatoes, halved and doused in olive oil

2 tbsp brown sugar

2 tbsp red wine vinegar

2 tbsp tomato paste

1 tsp chilli flakes

50ml olive oil

50ml water

Salt and pepper


Cook the onions in a pan with the olive oil, adding more olive oil until soft. 


Next grill the halved tomatoes until almost blackened, then take out and season well.

Add the onions along with the vinegar, sugar, tomato paste and chilli flakes.


Leave to cool down until thickened.


Next blitz with a blender until smooth.

Pour the mixture into a sieve, pushing through and leaving behind any lumps.


There you have it, a great homemade tomato sauce for dipping.
