Oriental Chicken with Grilled Avocado
4 Chicken Breasts, Thighs or Legs
6 Spring Onions
2 Tbsp Toasted Sesame Seeds
4 Ripe and Ready Avocados
Salt and Pepper for Seasoning
For the marinade-
4 tbsp olive oil
Juice of 1 lemon or lime
1 lobe of fresh ginger, peeled, & finely chopped.
2 red chilli's chopped
Bunch of fresh coriander
2tbsp soy sauce
1 tbsp Worcestershire sauce
Set your BBQ on high heat.
Slice the chicken breast lengthways in to 3 strips per chicken breast and place in a bowl.
Combine the marinade ingredients then add the chicken, leave to marinade for an hour. (If you leave overnight, add the lime juice an hour before use).
When ready barbecue at a high temperature. Chicken breasts will only take about 4 minutes on each side.
Leave to rest on the warming rack when cooked, and move onto the avocados.
Quarter the avocados, leaving the skin on. Then add a generous amount of seasoning and a drizzle of olive oil.
Lay on the barbecue to colour.
Serving Suggestion: You can serve the Avocado as they are (just remove the skin), or you can mash with a dash of lemon juice, crème fraiche, chives and chopped chilli, perfect alongside your oriental chicken.
